Miso Mint Salad

If you’re diligent about eating boring salads in an attempt to slim down…stop that. This Miso & Mint Summer Salad packs serious flavor, satisfaction and nutrient density.

There are a couple things going on here that make this salad even BETTER for weight loss than your standard garden salad with, like, balsamic.

For starters, did you know that practically any salad dressing you buy or get at a restaurant is made with added sugars? Here you are, thinking you’re making a healthy choice, and actually you just poured high fructose corn syrup over your meal. None of that happening with this salad so don’t you worry.

The next silly thing about typical salads is that the lettuce is lazy. It’s not DOING much for you. Instead, we’re using dark, leafy greens that are full of useful nutrients.

And finally, a nod to one of my favorite topics: Digestion. The health of your gut has everything to do with the size and shape of your body. That’s a whole other conversation but just know that this salad is loaded with the fiber you need, the fats you need AND a touch of miso paste which is rich in probiotic bacteria.

Miso & Mint Summer Salad Recipe

Ingredients
  • 4 cups baby spinach
  • 4 cups napa cabbage (sliced very thin)
  • 1 cup bean sprouts
  • ½ cup carrot (chopped)
  • ½ cup cucumber (sliced)
  • 2 cups navy beans or mung beans (pre-cooked)
  • 1 cup mint leaves
  • ½ cup sesame seeds
  • ½ cup sliced almonds
  • FOR DRESSING
  • 2 limes (juiced)
  • ½ cup sesame oil
  • 1½ tsp. jalapeno pepper (seeded and chopped)
  • 1½ tsp. ginger (peeled and chopped)
  • 1½ tsp. miso paste
Instructions
  1. To make dressing, combine ingredients in a blender or food processor. Set aside.
  2. Then combine all salad ingredients in a large bowl. Top with dressing.
